Development and validation of new analytical procedures by HPLC and capillary electrophoresis with the aim of evaluating molecules of interest for food quality and safety. Attention is primarily focused on sugars, amino acids and small molecules. Several food products are currently examined, such as sweeteners, milk, honey, beer, essential oils, grapes, wines, fruit juices.
