At the end of the course the student will gain acknowledge about the recovery of agri food by-products and their reuse in different fields, with a scientific and critical view.
Course contents summary
The course will provide an initial background on biomass deriving from the entire food chain (from the farmers to the consumers).
General classification of agro industrial food residues and by products and definitions. Circular economy.
Description of the concept of biorefineries processes for the recovery and valorization of a rich source of useful compounds like carbohydrates, proteins, lipids and polyphenols, which could find high-value applications in many industrial sectors.
Innovative and sustainable processes for the extraction of the most important compounds, with a particular attention to proteins, lipids, carbohydrates. Different processes will be compared.
Particular attention will be put on the use of advanced analytic techniques for the identification of valuable molecules and for the assessment of their integrity.
Examples of fields of valorization will be described: feed, food, cosmetics.
Material provided by the lecturer will be a selection of update scientific literature in the field.
During the course some study cases will be discussed, by choosing them from scientific literature or European projects actions.
