Learning outcomes of the course unit
The first objective of this class is to transfer knowledge about the factors involved in sensory perception of food, the different types of sensory analysis techniques, the proper modes to carry out sensory tests and to analyze the results. The second objective is that to provide the student the fundamental information about product characteristics and production processes of cereal based food products, sweetener, fruit juices.

Written exam that will verify the acquired knowledge on the class subject and the ability to apply such knowledge to the solution of case studies.
